A Cookie Sandwich Tower
For those of you who've been following my story for awhile know I'm completely in love with decorating and stacking doughnuts. I feel like Haute Stacker can literally and figuratively elevate doughnuts to the status of wedding cake or gourmet dessert. Never before have doughnuts been so beautiful and sophisticated, but I'm just as excited about all the other possibilities Haute Stacker offers for all the other sweet favorites.
This idea is perfect for a birthday party actually...just like with the doughnuts, these cookie sandwiches simply slide right off the top when it's time to serve them. I didn't get too fancy with these cookies, but you can certainly see how you can create quite a themed cookie display by incorporating various colors and toppings. All that's required in order to stack cookies, is to punch a hole in the center.
A standard apple corer works perfectly for punching out the center of cookies. In fact, it works perfectly for punching out the center of nearly anything you want to stack (i.e. sandwiches, cheesecakes, brownies, rice crispy treats, cupcakes, etc.). The little center bits would be great on ice cream btw...
Once you've punched out the centers, it's time to add the frosting layer. I just spread it on using a butter knife, but you could pipe it on to create a fancy effect if you wanted. Another idea is to roll the sides in sprinkles...who doesn't love sprinkles!
Then it's just a matter of placing each cookie sandwich on the stacker plates and sliding the stacker plates onto the stainless steel center post. You have to admit that these cookie sandwiches look much more special when stacked 2 feet tall than when on a plate. There's just something about displaying food vertically that makes it feel more important...
